Ingredients
- 1 tsp olive oil
- 1 cup onion, chopped
- 1 medium green pepper, chopped
- 1 grilled skinless chicken breast fillet, chopped
- 1 Tbsp taco seasoning mix
- 1 cup canned chopped tomatoes (or one large fresh tomato)
- 1/2 cup 4 Cheese Mexican Blend Fancy Shredded Cheese
- 1 cup canned black beans
- 2 slices cooked bacon, chopped
Instructions
- Add olive oil to skillet warmed to medium heat.
- Add chopped onion and pepper; stir occasionally until tender.
- Add chopped chicken and taco seasoning. Stir to until seasoning has coated chicken.
- Add the chopped canned tomatoes including juice
- Stir in the shredded cheese until cheese is melted and blended into the tomato juice.
- Rinse the black beans and drain. Add the beans to the skillet.
- Add the chopped bacon and stir in.
Makes four servings.
